A 2019 study funded by the US National Heart, Lung, and Blood Institute (NHLBI) followed data from 29,615 US adults. It found associations between higher dietary cholesterol or egg intake and cardiovascular disease risk. The researchers reported that every additional 300 mg of dietary cholesterol per day was associated with a 17% higher cardiovascular disease risk.

But other large studies have reached different conclusions. A 2020 analysis involving more than 177,000 people from 50 countries found no significant association between egg intake and major cardiovascular disease or mortality.

That difference matters. Much of the evidence comes from observational studies, which can identify associations but cannot prove that eating eggs directly causes heart disease.
